Fido, I think an apartment is absolutely the way to go. Hwmom and I just started a few years ago using self catering cottages when we go to Ireland, rather than B & Bs, and I for one much prefer to be able to slob around in a home from home, than having to go and ask for provisions to make another cup of coffee with UHT (AKA UGH!) milk. I use hotels quite often when I travel with work, and absolutely don't see what the money is paying for. A room with no facilities apart from a bath room and a bar that if it was in your home town you would certainly never go to. Obviously, I'm considerably down market from your price league, but nonetheless, I much prefer the privacy and ability to make a cup of tea with tea bags of your choice, and proper coffee in a cafetiiere, with a full sized kettle and real milk, and have different rooms so that if one wants to watch telly late, the other can sleep, and lighting a real fire (o.k. you're probably not going to be doiing that in your apartment)....but so much better in every way. And on the rare occasion when I have stayed in pricier hotels, I don't find the staff any friendlier or more helpful than in a Holiday Inn....they just wear posher suits.
Hope you and Mrs. F have a great time in Edinburgh!
