Indeed - John Dory is delicious. More common on the east coast. We get excellent local scallops, and razor clams are a big favourite in southern waters, particularly South Australia. In my neck of the woods, there are a plethora of tasty fish; IMHO the best of which are the Dhufish, Red Emperor, Baldchin Groper, and Coral Trout.

Leftover roast potatoes and some veg from Sunday Dinner. I popped a tin plate on top of the bowl and a couple of salmon steaks to bake, while the veg warmed through. Creamy sauce - just Chicken Bisto and a splash of double-cream, kinda like IKEA meatball sauce.
