Nothing like a simple meal:- Fillet of undyed Smoked Haddock oven baked in foil slathered in butter with bead and butter

We just went to the Toby Carvery*, lol! Not exactly home cooked but I'm not going to do a roast for 2, she loves a Sunday roast.
We were sat next to a somewhat senior gentleman, who came back with the king-size "upgrade for £2 more" plate, piled high. I thought to myself he is never going to eat that lot, not in a month of Sundays. Blow me, tortoise and hare, he apologised to his companions for taking so long, but gradually munched the whole lot, all bar one of his 2 yorkies. I was already thinking "chapeau" and then he said "where's the dessert menu?" I'm a bit of a trencherman myself, but there's no way I could've demolished what he packed away. Hut ab!

Tonight, we had a kinda Hotpot. I had some chicken breasts out to defrost, but then realised I had a glut of mushrooms and a courgette to use up. So, cooked them up with an onion in a pan, cooked the chicken in the oven, spotted some chorizo so gently cooked that off on the hob. Into an ovenproof dish went the chicken, topped with the mushroom, courgette and chorizo, splash of cream and then topped with sliced potato I hurredly boiled while putting everything into the dish. Bouillon poured over and loadsa butter on the potatoes, into the oven at 220 for half an hour to cook on and crisp up the potatoes. It was really good!
Soulmate! I have a saying (which I've likely picked up from someone more widely read) that great Chefs do indeed make great creations whereas great Cooks make great meals from the leftovers. I'm a cook, too. Mrs will often say how she'd enjoyed a meal and could I do it again ... to be disappointed by the explanantion that it was a one off as the two or three bowls of leftovers in the fridge were unlikely to ever align themselves ever again.I tend to find that unplanned meals turn out the best, as in have a look in the fridge, see what you've got and make shit up. Turns out great rather than plan a great meal that turns out average at best. In not a chef I'm a cook.
