Prefer Mac OS X above all else. Although the few machines we have with Win7 are actually sort of OK -- way better than Vista, which we skipped altogether, and also loads better than XP, which most of our office runs.

On my Parallels (Virtual Machine within OS X) I run WIn2k, because it does all I need and is relatively nimble.

There is (0r was) Yellow Dog, as well as SUSE for PowerPC. However, with Mac OS X being based on a Mach (UNIX-like) kernel and a BSD subsystem, and OpenDarwin freely available I wonder why anyone would. You certainly don't need anything special to (compile and) run Unix or Linux stuff on a Mac...
