Similarly - I have a good supply of wild/organic venison - I had to buy another freezer, I'm not joking - from a mate that takes them off the hill in Sutherland - as part of the deer management program in Assynt - it is the only red meat I eat - superb. He butchers them so, in addition to the normal cuts - can bring me heart, liver, shanks - stuff you wouldn't find in a butchers.
