Personally, I use mutt. I doubt you'd want to use that though since it's probably not what you're after.
When I had used Windows in the past I found TheBat! to be incredibly good.
As far as address books go, I'd want to use something that will let me export the data later on, Thunderbird doesn't lock you in at all so you'll be fine with that.
