Oooh I'll second Monmouth coffee, some of the best espresso I've ever tried.
This is a topic I can get behind, Edinburgh is jammed with good coffee. Artisan Roast on Broughton Street are the local guys and most of the independent city cafés use their beans.
I really like a wee place called Word of Mouth out on Leith Walk, the coffee is pretty no nonsense but for ambience and food it's hard to beat
