Tasty ideas with Mayo?

If you make the mayonnaise yourself and want to keep it simple, you can vary the vinegars (balsamic, flavored, etc), the oils, add and try different type of mustard too (maybe horseradish). On the other hand, mayonnaise is the base for several other sauces : aioli, tartare, gribiche, mousquetaire, rouille, cocktail, ravigote, remoulade, etc. Possibilities are infinite.
