For y'all info, guys.

PAO (Period after opening) is only required if there is a shelf-life of more than 30 months since manufacture. Therefore, it's 'only' 12 months since opening the package. That being said, during testing of PAO, the fail criteria can be on microbial activity, degeneration of packaging, degeneration of product (smell), degeneration of product (visual), and degeneration of product (performance).

Although it's a legal obligation to have a factually determined PAO or shelf-life, it all depends on how picky you are in terms of using slightly degenerated products - for example the crusty/rusty Cella block aforementioned which still performs as if it was made yesterday.
