Its my first year cooking the xmas dinner this year... so its a turkey as the wife loves it (I'd rather beef).

Im going to brine mine on xmas eve, it is meant to make it very moist... well thats what they say on youtube lolI prefer game meats, probably go for pheasant, duck and pigeon this year, I can't cook turkey without it tasting too dry.

Yep, it's a good word. Never saw em when I was a kid but now they are all over the place in certain areas of the City. You can drive by and hear the popping sounds during the hunt, but people have real bad aim and end up hitting each other. I hear some gang members are also involved in squeasel hunting and are especially poor shots.Squeasel season opened in Chicago and suburbs on Nov 15th.

Yep, I reckon Boxing Day is my favourite too; in fact I reckon turkey breast tastes better cold.Christmas eve - Rib of beef for hot beef sandwiches.
Christmas day - Free range Turkey
Boxing day - cold cuts of Beef, Turkey, pigs in blankets with added ham, fried (mashed) potato/turnip in beef fat and mixed pickles.
Actually Boxing day dinner is always my favourite.
