Back on home turf ...

It's Fish Cake with seasonal vegetables and a basil & caper sauce.

Layers of flavour ... the spinach and lettuce down first with some black pepper, cooked and chilled green beans on top. Then, the lentils which I cooked with chicken bone broth, red chillies and smoked garlic. That brought the saltiness. Scattered that over the salad then the diced tomatoes (de-seeded) - I was in two minds about whether to lightly cook the tomatoes in butter at the end but decided I wanted the crunch.

Sea bass took about three minutes to cook in stainless steel. Pre-scored, skin-side down until released then flipped over for a matter of seconds in a little butter. Fish out, scallions into the pan with the butter and poured over the fish.

Those lentils cooked in bone broth are sublime.
 
I will try and get a pack of lamb burgers this weekend. I may have to find my passport and head over to St Johns Wood or Notting Hill...
There seems to be a thing at the moment everywhere here with lamb koftas. I haven't got round to them this time but may try when I get home. The butcher was making them this morning when we went in and the smell of minty lamb hit me like a brick wall. Was fabulous. We don't have anywhere near the butchers they have here back home :(
