You just need a rebrand @Mark ... yours is actually a sort of Cacio e Pepe.
Both Cacio e Pepe and Carbonara are classic Roman dishes, both based on sauces from pecorino and pasta water. Carbonara levies egg yolks for the sauce while Cacio e Pepe goes mad on the pepper and brings it in from the, start rather than ground over at the end.

Be careful walking around there now!One strange to me item I usta have in San Francisco back in the 70s-80s was The Joes Special, served by that same named diner located in a kinda run down part of town. Yeah sometimes I'd get a crazy pull towards eating one and it was an interesting area to walk around.
Sooooo, keep in mind I was making em (Joes) for myself until the 90s and then done. Damn spinach did me in...heh. Still, maybe it was the beef/ egg thing too.
