Here's a cheesecake I made a few years back.

I find commerical cheesecake just too sweet and really don't like it, so make my own.

How?

Mash up Digestive biscuits and stir together with some melted coconut oil, pressing into a dish with a removable ring. Coconut oil sets solid in the fridge, so pop that into the fridge to cool.

Two parts cream cheese (not Philadelphia, please ... just cream cheese) and one part double cream. Whisk together with vanilla bean paste and a little honey until firm.

Spoon into your now chilled dish and dress with fruits or cacao nibs or whatever floats your boat.
