New to DE - Merkur Futur, 33C or EJ DB89?

Get a 37C from Connaught Shaving. It'll suit your needs just fine. Don't worry about all the hype and nonsense about them.
Put a sharp blade in it and learn to use it. They're well behaved efficient razors.

A 37C or 39C is certainly an option. It has a deep notched safety bar so is half way to being open comb and it does handle more than a day's growth well enough.
 
I've done a week's growth with an open comb easily, and they're no more difficult to use than a safety bar razor.

I would probably have suggested a beard trimmer too, if you're only shaving every three weeks and your fiancee prefers the fur you may as well just keep a short beard.
