Similarly - I have a good supply of wild/organic venison - I had to buy another freezer, I'm not joking - from a mate that takes them off the hill in Sutherland - as part of the deer management program in Assynt - it is the only red meat I eat - superb. He butchers them so, in addition to the normal cuts - can bring me heart, liver, shanks - stuff you wouldn't find in a butchers. If you need inspiration as to cooking venison - I find this a great resource - so much so - I bought the book - cheers - I.OK not actually tonight, (tonight was Spanish prawns) but I have a friend who helps manage an estate and sometimes they have to control certain deer, especially the ones that have been injured or ousted. He had some Sika flank and silverside, so I tried my hand at venison steaks. Came out absolutely amazing. Seared and left to rest well. Gravy from the juices, garlic mushrooms, mash and 'Italian' carrots. Mrs keeps asking when I'm going to see him next...
