Coconut Bread Pudding

After our Christmas dinner, I made some coconut bread pudding. We'll have it in a little while with caramel sauce and vanilla ice cream, while we watch the library DVD of the Downton Abbey movie.

Man, I love coconut! Back where I came from we have a cake made with cassava and coconut! I'll try to get the recipe and publish here!

It has 1-1/2c coconut mixed into it initially, then another 1/2c on top halfway though baking.
