Tonight we had warm roasted chicken and cauliflower salad with spinach, lentils, chopped dates, and slivered almonds. Strange combination, but it works. I only ate half of my bowl, so I have leftovers for lunch tomorrow.
This evening we had another Buddha Bowl dinner, this one Hawaiian, with chicken, peppers, sweet potato, pineapple, and avocado, topped with a spicy tomato sauce, over a bed of rice and spinach. Quite good.
