hones and stainless

Hi guys

Bought myself some nice stones from Neil on Monday super service had them on Tuesday, bougth a K1000 /6000 combination and a Thurigingian 10,000. Lapped them all flat last night and started on my first honing job. A meat cleaver of a blade that i bought off eaby for about £3, a 6/8 Gorge butler possibly full hollow but it does look as if the's a fair bit of meat left on the blade so its probaly somewhere between full and half. Anyway started, honing it last night for about two hours, to be fair the edge although blunt was in reasonable condition with no nicks or chips, so i did get a reasonable edge by the close of play but not sharp enough to pass the hair cutting test.

Now the questions, as the blade etched non - stain i'm assuming that it's stainless steel, (i put a magnet on it to check). Proabaly not the best blade to start on, any rules of engament that i should be employing to deal with honing stainless, i'm aware that the honing will take a lot longer but is that all.

Secondly i'm thinking of getting a Shapton 16,000 as i would rather finish the edge with a fine hone than a pasted strop, but where can I get them from, and what are peoples opinions on this versus pasted strops.

Bit harder to get an edge on but not much more difficult just takes a bit more time a carbon edge does give a bit more feedback when you're honing.

As for stones.
