Fossilized Chicken

He's the the chef patron of The Fat Duck in Bray (UK) which has been voted world's best restaurant and had three Michelin stars for the majority of it's existence. The point of this series missed by the majority of commentators was not to provide a step by step recipe guide which I agree for most is impractical but an exploration of ideas and techniques to improve a basic recipe some of which you may chose to adopt or not.
