Damn you, Gary Rhodes...

HFW's book Meat has pig tail and ear recipes... as well as recipes for just about every other bit of an animal you might (or might not) want to eat. Fergus Henderson's Nose to Tail Eating is a remarkable book for those who like getting earthy.

For me it's about the process as much as about the eating. Preparing something from as close to first principles as I can is my hobby, it relaxes me.

Not much, I used to enjoy reading his articles years ago (Guardian/Inde ?) but I don't have any of his books. Didn't he head one of Conran's eateries at some point? That would suppose classic french brasserie style, non?

I like HFW's "bibles" too, a good investment.
