The book will probably ask you to check the specific gravity as it is now and plug it into a formula using your 1st so after you aged the sugar. Then they'll cover the yeast inhibitor and bulk vs bottle aging. You're on an adventure.
On the other hand I'd just check how it smells. Use my thumb to check the temp and decide if I want to go the full 3 months or if I want to freeze it now for apple jack.
But, you know if you carry it on to bottled wine, It could be a good chapter for that book you/we all think about writing!
Don't forget a little for the fairies before you drink any!
