What are you eating tonight?

I've got some Basa Fillets which will get some butter and in the oven while simple steamed veggies and more butter is prepared, along with a Mornay Sauce. Simple and classic.

Bottle of Louis Jadot Beaujolais Villages to swill it down with. Simple and classic.

Oh man, had some fresh walleye pike tonight, along with peas inna light butter sauce. For you guys unfamiliar with this fish, it's a mild one with a very fresh flavor and medium firm meat. It's a favorite of anglers who frequent parts of the US and Canada and they get up to about 7-8 pounds...maybe a little more. Not that great of a fighter but very tasty.

The eyes are sorta weird and the light kinda reflects off em. Whole fish will sell for around $8-10 a pound and fillets are about double that. I sautéed these fillets in butter and a little oil, after first dipping em in cream and then rolling in seasoned panko bread crumbs. If y'all like cod you would love this.....line caught from Canada. Whew boy, it was excellent!!

Easy and fast breakfast this morning.....English Muffin and bacon with some nice French Roast coffee.

For me, the best possible way to cook bacon is using a microwave oven. I just put a paper towel on a plate with the bacon slices laying on top and pop that in the microwave for a short time. Four pieces only takes just over two minutes and the meat comes out chewy with all the grease melted away and caught on the towel. That will continue cooking a little bit so taking it out a little early is ok. Clean up is a snap.

Y'all need to try this method sometime.
